Many years ago I was told by a trusted friend that I should put salt in the filter with the coffee grounds before making the coffee. Just a few crystals, not even a full pinch. Before making the coffee, not after.
The idea is that the salt slows the development of the bitter notes that develop and help stabalise the taste. When I remember to do it I find it works well and my coffee retains it’s taste even if I end up drinking it cold.
